Good to meet you
My name is Jon-Michael and I am the head roaster, sourcer, sampler, cupper, packager, and deliverer of Sit Coffee Roasters. My coffee journey started in my older adult years as I found it a worthy contender as a performance enhancer for my trail runs in the beautiful Wasatch Mountains of Utah.
I didn't discover origin coffees and pour overs until even after that, and when I did, a new world opened up to me. Coffee has brought me immense joy, satisfaction, and connections throughout the years; as much as I love the taste of it I savor the fruits of its ability to create and enhance community and personal relationships.
I look forward to providing you not only amazing coffee but also amazing opportunities to sit with your friends, your community, and yourself. Like Shunryu Suzuki said, "just to sit, that is enough."
When I'm not geeking out over coffee, you'll catch me kicking back in those mountains around Salt Lake City, jogging and breathing in the high mountain air, sometimes accompanied by my partner Kelli and/or my Border/Corgi mix, Tikka.

Small batches
We roast on a 1 kg Aillio Bullet roaster. Roasting is an intense sensory experiencing engaging each and every sense in every phase of the roast - we start with our senses first and utilize modern technology in order to enhance the coffee roasting product.
The Aillio comes with built-in software which helps to make our job more efficient and our product more consistent; it allows us to replicate our desired roast profile for each and every batch, every single time - rest assured we are focused on consistency and insanely high quality.
Quality Beans from Quality Importers
As a fledgling coffee roaster we rely on our import partners like Royal Coffee and Cafe Imports to deliver us green coffee beans which are sustainable, fresh, and sourced from their origin. They have worked tirelessly for many years and decades developing relationships with the coffee communities in countries all over the world. We look forward to the day when we can travel ourselves to the beautiful countries where this precious commodity is grown and harvested and form and nurture relationships with the farmers who work so hard to provide our coffee.

We have long been on our own journeys of healing, self-care, mindfulness, awareness, recognition, and acceptance. Our company was born from following and living our values of doing work we enjoy, taking time and space for personal growth, and treating each other with compassion and kindness.
Fresh roasted
As a small company we are in a unique position to offer coffee roasted on a weekly schedule. Coffee beans require a natural degassing time period. For us personally we have found a minimum of at least 7 days and even as many as 21 days for the degassing period to really consummate and taste the amazing flavors from each of the origins from which the beans hail.

All programs which provide us with resources, knowledge, and education in order to support our commitment of being amazing at the work we do, supporting the industry and community which we work in, and supporting a more fair and sustainable industry.
